I'm working in the evacuation of a university and want to know
what is the appropriate speed for the evacuation

Pathfinder has defaults for open travel and stairs that are based on the SFPE Handbook of Fire Protection Engineering. There are other standards. For example, IMO 1033 breaks speeds up into categories that are faster or slower than the SFPE's depending on age. If you will be presenting your analysis to an AHJ, your jurisdiction likely has a standard that they expect you to use. If you aren't particularly concerned about meeting a standard, the defaults should give you a reasonable starting point.
